Another Yummy Chicken Recipe

Yeah I don't have a good name for it. The inspiration came from this recipe, but I altered it a bit. My 3 yo gobbled this for dinner one night (warm) and the dcks gobbled it for lunch the next day (I left it cold and cut the chicken into cubes and they loved it--even asking for seconds of it which is virtually unheard of).

4 boneless, skinless chicken breasts (frozen is fine; allot more time for baking)
juice of two lemons (or about 1/4 cup)
juice of one mandarin orange (or juice of one can of mandarin oranges)
3 Tbsp Extra Virgin Olive Oil
3 garlic cloves, minced
1 tsp Italian Seasoning
1 tsp salt (sea salt if you have it)

Preheat oven to 400.

Place chicken breasts in 13x9 glass baking dish.

Mix all other ingredients in small bowl. Pour contents of bowl over chicken. Put chicken in oven. Bake until done (usually about 30 mins for thawed breasts and 50 for frozen).
