Mini Banana Muffins
2-3 very ripe bananas, peeled
1/3 cup melted butter 1/2 cup sugar 1 egg, beaten 1 teaspoon vanilla extract 1 teaspoon baking soda Pinch of salt 1 1/2 cups of all-purpose flour (I do half white and half whole wheat) Mix together, put in a mini muffin tin and bake at 350 degrees for about about 6 - 8 minutes. These cook very quickly though, so watch them. My littles LOVE these and they are so easy to make. |
