I would never put up with this adult tantrum, because THAT'S WHAT IT IS. "I didn't get my way, so wha, wha, wha, if you don't let me X, I'm going to leave."

Termination time. Whatever time the contract says you are required to give, that's how long she has to find a replacement. If your terms allow you to terminate on the spot, that's what I would do.
