I have the same symptoms as previously stated, but they show up within 30 minutes of being glutened. I believe it can affect behavior in children, because they don't know how to verbally express how the gluten is making them feel inside. It affects my mood too. Most of us are crabbier when we aren't feeling well it only stands to reason it would affect a child that way too.
