I like to do meals that have some ingredients I can use for both meals but aren't exactly the same thing, like I make extra baked chicken for lunch then we have chicken tacos for dinner with the leftovers. Or we have rice and beans for lunch, and extra rice goes with a stir-fry in the evening. If we do veggie slices or sticks for lunch or snack, extra for a salad that night.
I feel like having even just a few of the ingredients ready to go makes it feel way easier put together a healthier dinner instead of just throwing my hands up and sending my husband to get pizza.
