As for the family that only gets paid on Wednesday...they need to pay you the Wednesday before Monday, not the Wednesday after Monday. I would tell them. No pay, no stay. Pay early, don't pay late. The first time they try it, I wouldn't permit them to attend on Tuesday.
Get ready for a fight! 
I had a horrible time trying to help them out with their payment issue. They get paid on the 1st and the 15th and decided after they signed my contract that they wanted to pay on those days. It did not work out well!
