I used to be a trainer for physical interventions at a previous job. Here is the correct way to intervene to prevent further injury from a bite:

1) Stabilize the body part being bitten by putting your hand on the back of the biters head gently.
2) Push into the bite (for example, if it is a forearm, push the forearm towards the biters mouth). This will force the biter to open and release the bite.

It is important to never pull away from a bite, as it leads to more tearing of the skin. Bites are so painful, and so prone to infection.
