A favorite lately so I thought I would share.

Raspberry Walnut Banana Bread

1 cup white flour
3 cups whole wheat flour
3 tsp baking soda
1 tsp salt

1/2 cup butter
1 cup brown sugar
1/2 apple sauce
4 eggs
5 cups mashed bananas

3-4 cups raspberries (blueberries, blackberries and diced peaches work too)
1-1.5 cups half or whole walnuts

Mix dry ingredients together.
In separate bowl cream butter and sugar until fluffy. Add apple sauce, beaten eggs and bananas. Mix well. Stir in dry ingredients until just mixed. Fold in berries and nuts. Bake in loaf pans or muffin tins.

Makes 4 regular loaves. Freezes well.

Sometimes I take out enough batter for one loaf and stir in some dark chocolate chips. Mmmmm!
