I'm doing all new meals for the next 2 months. My requirements are cheap and easy, also non processed.
This week is all crockpot meals. I will share each day as I make them.
Today I'm making coq au vin in the crockpot for lunch tomorrow. Recipe is as follows:
1 8 oz package mushrooms
1-2 onions, depending on size
4-8 chicken thighs
1 cup grape juice (more if you use over 4 chicken thighs)
Italian Seasoning
Directions:
Place a little bit of oil in a saute pan. Place Italian Seasoning and salt and pepper on the chicken. Brown the chicken thighs. Took me about 3 minutes a side.
Place chicken in bottom of crockpot.
Place onions and mushrooms in same saute pan. Add grape juice. Cook for about 5 minutes.
Place on top of chicken.
Cook for 3-4 hours on high or 6-7 hours on low.
Yum!!!
If you are on the food plan, throw a whole grain roll or piece of bread at the dcks and call it good! You may want to add more mushrooms, depending on how many kids you have.

Total cost of recipe was $12.61 (I have the seasonings). Total CACFP reimbursement is currently $17.29.

I need to utilize my crockpot more. I only do 4 things in there currently, Cornish hen, chili, meatballs w/bbq sauce, and roast w/potatoes and carrots.
