Default Rainbow Cupcakes

think this is so cool for a treat!

Rainbow cupcakes

Here's what little leprechauns look forward to on St. Patrick's Day: a magical snack that can add color to the grayest March afternoon. Pot of gold not included.
Ingredients
White cake mix (we used an 18-1/4-ounce box)
Food coloring (red, blue, green, and yellow)
Baking cups
Whipped cream (optional)
Instructions
Prepare your favorite white cake mix, then divide the batter evenly among six small bowls. Following the chart below, dye each bowl of batter a rainbow color.

RAINBOW COLOR DROPS OF FOOD COLORING
Purple 9 red and 6 blue drops
Blue 12 drops
Green 12 drops
Yellow 12 drops
Orange 12 yellow and 4 red drops
Red 18 drops


Line 16 muffin pan wells with baking cups. Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath.
Bake the cupcakes according to your recipe directions. Before serving, remove the paper wrapping, and if you like, top each cupcake with a whipped-cream cloud.

We had these last year at our local library...the kids LOVED them! Thanks for the reminder about them and the recipe (which I had managed to lose)!!!!

if you use the wilton colors it works way better. I did my dds cake last year like this.

Ok, to be honest, those look super gross. Yes, the kids may like them and think they're "sooo pretty", but have you ever READ anything about artificial food coloring? Probably not if you posted this recipe. (sorry I'm not trying to be mean at all, just hoping you'll read up)

ummm...sorry but you comment was super rude, if you dont like food coloring then dont make the darn cupcakes, but to act like the op did somethng wrong by sharing the recipe is a bit out of line. Kids like stuff like that and a cupcake once every st patricks day won't kill them

I wasn't trying to be rude, I already stated that. I was just hoping you guys would read up on some of the possible negative effects food coloring can have on children. I just meant to say that we, as child care providers, need to be watching out for the well being of children and by adding SO much food coloring, for what? For it to be pretty? Not worth my child's health! That's all!

Sorry if you, or she, took offense!

Another thing worth mentioning, it's not "every once in a while" that children are getting food coloring. Pick up a box of crackers, a box of cereal, whatever, most stuff has food coloring! It's sick, but true. So they are getting it when we aren't looking, adding it to cupcakes is just increasing the amount that you "notice." It's also in most shampoos, hand wash, and other non food items. Food coloring is everywhere, and especially in those items targeted towards children.
