Hi, I'm the cook/floating teacher at an Ohio daycare center. Today our water heater broke and caused a minor flood. We were going to close, as we had no hot water, but corporate made us stay open.
The directors and myself searched Ohio food codes, trying to find out if we needed to close for food safety reasons. I had to boil water on the stove in order to wash dishes and everyone had to wash their hands in cold water.
The ohio food safety codes are a hot mess of legalese - does anyone know what the federal and/or Ohio health codes are in regards to hot water?

Welcome to the forum. Not sure if their are federal standards that apply. Most likely you would abide by state licensing guidelines. I have yet to find OH standards requiring "running" hot water, it only references hot water to sanitize or for use or warming formula. You can take a look at Montana's requirements for reference.

In my state we have to have *running* water, I don't know that it says anything about temp.
