Thought I'd share. I don't make these for the dc kiddos, but mine own love them! They are nice to curve a sweet craving
1 c oatmeal
1/2 c pb
1/3 c honey
1 c coconut flakes (I use Rice Krispies or crushed Cheerios-not a coconut fan)
1/2 c ground flaxseed
1/2 c combined mini chocolate chips, dried cranberries, dried blueberries, raisins, or whatever you fancy (I would only use 1 or 2 not all
)
1 t vanilla
Mix and let sit in the frig for an hour. Ball up into 1/2-1 inch balls. Good in the frig for up to a week.
I usually double the recipe and put them in the freezer-they don't get too hard, so you can eat them right away!

I made these last night and ate alot...right out of the bowl. They're really yummy!

Ah, ya, that's why I make a double batch, then at least some make it to the freezer

This sound delicious! And I love the idea of using rice krispies instead of coconut ... not big on the coconut either.
