Cut sweet potato's into lengthwise slices, I prefer peels left on for more nutrients (just like for their russet friends).
Roll in olive oil for a thin coating (you can substitute canola/vegetable oil if you prefer), place on pre-oiled baking pan, bake at 400* until soft, usually about 20-40 minutes.
While still sizzling out of oven sprinkle with a bit of brown sugar (some like paprika, too), allow to cool (they will harden up a bit). Serve.
You could also forgo the brown sugar and offer a dip instead; caramel sauce works great for parties...
Kiddos love them and they are packed with Vit. A. They work great as a snack or side dish.

My DS loves these and I have these along with home made apple/berry/carrot sauce made and in my fridge constantly.
