I do wreaths with tissue paper to rip glue, salt dough ornaments that they make with cookie cutters, plastic ornaments that they can paint, pre cut out shapes (bells, Christmas trees, ornaments) and then they can decorate them however they want.

This year, I think my parent gifts will be the mistletoes picture on canvas. (not process but CUTE!)

I bought small canvas for cheap this year. I think for my younger ones I am going to use contact paper to cut out a trace of their hand. I will stick it on the canvas and let them go to town painting. When they are done ill remove the contact paper and their white hand should be left- with their painting around it
I also do the tissue paper wreath. Not sure what else we will do yet

Is it process art if, for example, I just put out orange, black, and purple paint? Or if I suggest "Let's make some Halloween pictures! What can you draw that's spooooky?" Or if at Christmas I provide cardstock shapes for them to trace onto other paper and cut out or color?

That's how I do it.

Whatever holiday it is, I put out related items. Orange and black pipe cleaners, pom-poms, stickers, stencils, paint dabbers, Halloween stampers etc....

I have a big bulletin board above my table and I will post all sorts of pictures of cool crafts and pictures relating to the holiday (pumpkins, ghosts, black cats etc) and then let the kids go.

They can "copy" a craft/photo I pinned on the board or they can do what they want with the items I supply.

The craft area is like the sensory bin. I just put theme/holiday related items out and the rest is up to them.

omg thank you, the bulletin board is a great idea!

I think I got process v. product and free art confused but i suppose even free art can be gently directed, can't it?

I have one boy who, given a blank piece of paper and a box of crayons/markers/colored pencils, grabs a red one and draws a fire truck. every single time. Then he continues embelliishing his picture in red until it's bascially a red piece of paper! (he's not the reason I'm asking, he just cracks me up)
