Daycare Menus, Breakfast, Lunch and Snack Ideas>Pineapple Cranberry sauce-Huge Hit
meganlavonnesmommy 09:12 AM 10-06-2011
I served the kids some pineapple cranberry sauce as a fruit with their baked ham today, they ate it up! I make it and freeze in small bowls, then thaw before serving. It's sweet because of the pineapple and sugar, so not as tart as regular cranberries.

2 bags of fresh cranberries
20 ounces of crushed pineapple in juice
1 1/4 cups sugar
1 cup orange juice
2 tablespoons lemon juice

Rinse the berries, sort through removing any bad berries or stems. Set aside.

In a large saucepan, mix the sugar, orange juice and crushed pineapple with the juice until dissolved. Add the fresh cranberries and heat until boiling. Once it starts to bubble, decrease the heat until the berries start to pop, simmer for 10 minutes until all the berries have popped and it becomes thick. Add the lemon juice and cool.
