Print a new one with lates fees! Highlight the new amount and put it in their hand at pick up. Clearly tell them your expectations!

Yeah, she just dropped her oldest off after preschool so I handed her the bill. I fully expect a check tonight at pick-up. 
This is the dcmom who always acts confused, like the paid holidays don't apply to her, so I very clearly wrote out on her bill that she owes for a paid holiday too.
