Three simple bread recipes that are great for breakfast and snack time!

Pecan Raisin Muffins
1 ¾ cups unsifted flour
¼ cup sugar
1 tablespoon baking powder
¼ teaspoon salt
1/3 cup margarine
½ cup chopped pecans
1/3 cup dark seedless raisins
1 egg
¾ cup milk

Mix flour, sugar, baking powder, and salt. Cut in margarine until mixture resembles coarse meal. mix in pecans and raisins. Beat together egg and milk, add all at once to dry mixture. Stir lightly to dampen dry ingredients. Fill 12 greased muffins about ¾ full. Bake at 400 degrees for 15 to 20 minutes.

Zucchini Bread
3 eggs
1 cup cooking oil
1 ¾ cup sugar
2 cups grated zucchini (unpeeled and packed)
2 T. grated orange peel
3 t. vanilla
3 cups flour
1 t. salt
¼ t. baking powder
1 t. soda
1 t. cinnamon

Beat eggs until light, add oil and sugar. Mix well (about 2 minutes). Add zucchini, vanilla, orange rind, mix again. Add dry ingredients and mix well. Pour into two bread pans that have been greased and floured. Bake at 350 degrees for 45 to 60 minutes. Test with toothpick for doneness.

Banana Nut Bread
1 cup sugar
½ cup shortening
2 eggs
1 t. vanilla
2 cups flour
½ t. baking soda
½ t. baking powder
¼ t. nutmeg
¼ t. cinnamon
1 ½ cups ripe bananas mashed (about 4)
1 cup chopped nuts

In large bowl cream sugar and shortening. Add eggs and vanilla. Beat until fluffy. Add bananas. In medium bowl combine flour, baking soda, baking powder, nutmeg, and cinnamon. Add to banana mixture. Stir in nuts. Pour into greased bread pan. Bake 45 to 50 minutes at 350 degrees or until done. Cool in pan ten minutes, turn onto rack and cool thoroughly.
